Spring Cooking Along the Crooked Road Classes at Southwest Virginia Higher Education Center

Cooking Along the Crooked Road, a culinary program at the Southwest Virginia Higher Education Center, announces the last six spring classes. Culinary classes are taught by local chefs and accomplished cooks. These noncredit, hands-on enrichment classes are open to the public. Adult and youth classes are available and meet in the culinary kitchen at the Southwest Virginia Higher Education Center in Abingdon. Designated class times and fees for the new classes are listed in the description below. April 26 10am-12pm Spring Youth Tea Party $24.00

Camella’s Tea Academy is coming to the HEC! We are pleased to present a very special hands-on tea party. The class will not only get to prepare and enjoy the tea party foods, but they will learn all about table etiquette, serving tea and some proper manner tips! Children ages 5-9 may dress in special tea attire. Gather a group or come alone for this special treat!

April 28 6-9pm Summer Sides and Snacks: Cooking Raw $35.00

Raw Culinary Associate Chef Jennifer Raichlin will help you make a memorable and healthy impact at summertime gatherings. During this hands-on class, we take the heat out of the kitchen and continue to learn more about the benets of creating raw food dishes. Raw food preparation involves keeping the ingredients in their most natural and unadulterated state where we retain more of the healthful benefits and savory that is naturally present in the foods we eat.

May 5 6-9pm Picnics and Moveable Feasts $35.00

With warmer weather upon us and summer around the corner, it’s the perfect time to learn how to prepare an easy, yet elegant afternoon picnic in jars. Mason jars are ideal for packing, transporting and serving just about anything from drinks, dips, salads, pastas and desserts. Learn about attractive ways to garnish and present foods for outdoor entertaining that will wow your friends. Beyond picnics, we’ll be discussing ideas for using “meals in a jar” for healthy school lunches and for eating on the go. The class will
be preparing and enjoying a rustic French picnic lunch.

May 12 6-9 pm The Best of Caribbean Cooking $35.00

Chef Catherine will lead a hands-on class concentrating on the unique style and avors of Caribbean cuisine. This style reects a way of life derived from street vending, family gatherings and festivals. Unique spice blends along with an abundance of indigenous produce from the trees and soil, sh from the sea, and poultry from the farms and streets have led to a vast array of culinary delights. Take this opportunity to learn how Caribbean cuisine is unique from other dishes in tropical areas, and how it can accentuate other cuisines.

May 19 6-9 pm A Taste of Greece $35.00

Chef Amine will be taking the class through the steps to prepare a traditional Greek Moussaka. Moussaka is an eggplant and/or potato-based dish popular in Balkan and Mediterranean cuisines, with many local and regional variations. In Greece, the dish is layered and typically enjoyed hot. Greece is the perfect climate to grow eggplants and it is not surprising to nd that numerous recipes in the region that call for eggplants and spices that are native to the region. The class will learn some Greek “food history” as they also prepare a classic Greek salad, Baklava and homemade Greek Yogurt Ice Cream. Amine’s classes are always superb and we look forward to stepping into the Hellenic world for some delicious and traditional recipes.

June 2 6-9 pm Appetizers on the Grill $35.00

If you are ready to jump into grilling season, what better way than to have Matt Shy, grill master, show you some great ideas for summer entertaining right o the grill. Matt will share a variety of his special grill recipes from meats, seafood, veggies and other unique oerings that will be perfect for your next party on the patio. Matt will also include some of his special summer drinks and a specialty grill dessert to finish up the evening on the patio. Join us for another of these special classes to get summer rolling!
